Ailsa BaySweet Smoke 1.2

This is a second iteration single malt from Ailsa Bay. Distilled at Girvan, the Sweet Smoke is the only whisky to experience micro maturation, whereby the spirit is initially aged in smaller-than-usual ex-bourbon casks for six-to-nine months in order to accelerate the process. This is then transferred into standard American oak barrels for several years. The flavour profile is that of light peat and candied fruit, with a dry finish. A really interesting release.
