Daftmill 2008 Vintage Winter Release

Daftmill is a unique farm distillery that only operates during the farm’s quiet periods, mid-summer and winter, resulting in limited annual production of around 100 casks. This meticulous approach ensures the highest quality in every bottle. Owned and operated by the Cuthbert family, Daftmill Distillery is a true farm-to-bottle operation. When not distilling, Francis Cuthbert manages the estate and grows the malting barley used in their whisky. For this release, the Optic barley variety was grown in the South fields and harvested in the last week of August 2006. It was then stored on the farm and malted in Alloa during the summer of 2007. This 2008 Winter Release is a remarkable batch crafted from twenty-three first fill ex-bourbon barrels, filled between the 14th of February and the 28th of April 2008. These casks were left to mature in the upper level of warehouse no.1 for over a decade, before being bottled in 2021. This limited edition release not only showcases the unique qualities of Lowland whisky but also highlights the meticulous care and craftsmanship that go into every bottle produced at Daftmill Distillery.
