Greywacke Pinot Noir

Introducing the Greywacke Pinot Noir 2021, a vintage that captures the essence of meticulous craftsmanship and terroir-driven sophistication. This Pinot Noir is crafted from grapes meticulously hand-harvested in the serene vineyards of Greywacke, where they were chilled overnight to preserve their delicate nuances, followed by a careful hand-sorting process. With an innovative approach, most of the fruit underwent destemming into open-top fermenters, with a significant inclusion of whole bunches, enhancing the wine’s complexity and texture.
As the grapes soaked on skins, they awakened under the influence of indigenous yeasts, beginning a natural fermentation process that was delicately plunged daily to extract rich colours, aromas, and tannins. Post-fermentation, the wine was gently pressed and then matured in French oak barriques, 30% of which were new, infusing the wine with subtle oak undertones and a sturdy structure.
