Based in Goa, Paul John distillery has created a pair of Indian single malt whiskies finished in different types of sherry casks for its Select Cask series, the Pedro Ximénez cask can be found HERE.
This particular expression is the Oloroso release, the Indian single malt has enjoyed a finishing period in Oloroso sherry casks, and offers up loads of dried fruit and baking spice.
