Starward Octave Barrels

Yalumba’s The Octavius is one of the world’s few red wines aged in these specialty 100L barrels. Once The Octavius was bottled, the freshly emptied barrels were sent to Starward’s distillery and filled with new make spirit. These American oak barrels aged the whisky more intensely (thus the relatively short maturation time.) The smaller volume creates more wood-whisky interaction, allowing this single malt to soak up more celebrated The Octavius Shiraz characteristics as it fully matured.
