Crafted from lightly peated malted barley and infused with live brewer’s yeast, this whisky benefits from extended fermentation, enriching it with profound fruity undertones. It begins its journey in top-quality, first-fill ex-bourbon barrels, acquiring a nuanced character, before undergoing a unique finishing process in new American oak barrels, carefully selected for their varying toast and char levels. This finishing at a milder ABV enhances the whisky’s depth, marrying the robust, oak-driven flavours with the inherent sweetness and spice. This process accentuates the vibrant fruit notes and the refined smokiness that are hallmarks of our core spirit, resulting in a whisky that’s both bold and elegantly balanced.
